Hyderabad: There is biryani. And then, there is the rest.
For true-blue Hyderabadis, biryani is food for the soul. And that is why foodies here experiment different varieties of biryani. If it was the Zafrani Biryani that recently became a trend, the latest is the ‘Nalli Biryani’.
More popular in the northern parts of the country, this variety of biryani is prepared using lamb shanks and rice, and has gained popularity with the dish now being served at several hotels across the city.
“Demand for this variety has increased considerably. People want to taste something new. So we introduced the ‘nalli biryani’ in our menu. It is prepared using lamb shanks and rice and is more popular in Mumbai, Delhi and Jammu & Kashmir,” says Aamir Baig, managing partner, Fanooz Restaurant and Banquet Hall, Masab Tank.
Unlike the regular biryani where meat is mixed with rice, for nalli biryani, the lamb shanks are cooked separately with spices in a curry form and then served with the biryani rice prepared separately. Some restaurants add minced meat to enhance flavour.
“Spices and garam masala widely used in northern India are used in preparing the dish. It adds to the taste,” explains Ghulam Ali Aejaz of Mughal Express at Banjara Hills. He says more people were now asking for nalli biryani in particular, with the dish gaining popularity in recent months.
Although priced a few hundred rupees more than the regular biryani, the pricing is not deterring foodies.
“See, it is the taste that draws people to the restaurant to enjoy it. On many days, the demand for nalli biryani is more than that for regular varieties at the restaurant,” points out Syed Mehdi Raza Kazmi, proprietor of Lucky Hotel at Nagole.
